If you have struggled to find foods your little one enjoys and will actually eat then this is the recipe for you. Eggs are a wonderful food. They are full of protein and vitamins creating a fully nutritious meal on their own. Eggs are also perfect for breakfast, lunch, dinner, or a snack. Mix eggs with a cheddar biscuit in these toddler egg cheddar biscuit bites and it’s a match made in heaven that any toddler would love!

How This Recipe Came About

Funny enough I don’t like eggs, but I really wish I did. They are full of health benefits and can be made in a variety of ways, but alas I am just not an egg person. Fortunately, my daughter likes eggs. She will eat them pretty much any way you serve them whether scrambled, over easy, or hard-boiled. She has gone through phases; however, where she seemed less than interested in eggs. Toddlers are funny that way. One day they love a food the next day they look at it as though aliens brought it from outer space and set it on their plate and they have no clue what to think about it.

During one of these food strikes on eggs I came up with an idea. My daughter loves bread! She has never tired of bread (one of the few foods she has not held a strike against!). I figured if I could somehow combine the eggs and bread she would likely get back to receiving a good dose of protein and all the benefits of eggs, albeit with a little less healthy breading, but still it seemed promising. Plus, making bread from home allows me to control the ingredients so I can keep things tasty, clean and simple, and ration the bread to egg amount so that the eggs are still the star of the show.

The Recipe Inspiration

I have made toddler-sized egg bites before and you can find that super simple recipe here. I decided to use the toddler egg bites recipe as a base and then combine it with a delicious biscuit and my inspiration for the biscuit portion came from none other than the infamous Red Lobster Cheddar Bay Biscuits. I’m not the biggest seafood fan, but Red Lobster has a few menu items I enjoy and one of them is the mouth-watering biscuits. I came up with my own version, but they taste amazing (even on their own) and my daughter and husband too love them combined with the eggs.

Recipe Options

One of my favorite things about this recipe is the variety. Those Red Lobster Cheddar Bay Biscuits are cheesy biscuits but they also contain garlic. Garlic can be potent and it is a distinct flavor. My family and I are garlic lovers, but not everyone is. The beauty of these egg cheddar biscuit bites is that you can make just plain egg bites and no biscuit, you can add biscuit without cheese or switch out the cheese for variation, or you can even add garlic and a tasty buttery garlic topping that I will share below to make biscuits that are just like those Red Lobster biscuits garlic and all.

When I make these for my daughter, I will frequently make a batch of the egg cheddar biscuit bites and a batch of the egg cheddar garlic biscuit bites so that she has both for some variety. If you make some of the toddler egg bites too then you have three options you can always have on hand since they are all freezer-friendly and easy to reheat.

Recipe

This recipe is simple and straightforward. The recipe uses basic ingredients, but packs in the flavor making these egg cheddar biscuit bites a food approved even by the pickiest of toddlers (and the rest of the family too!).

Ingredients Breakdown:

For the Egg Bites:

  • Eggs: One of the most obvious ingredients in these egg cheddar biscuit bites is of course eggs. You will make the egg portion separate from the biscuit dough and combine them in the baking pan before baking.
  • Whole Milk: You can use any milk that you prefer, but I recommend using whole milk for light and fluffy eggs with just a bit more flavor.

For the Biscuits:

– Dry Ingredients:

  • Flour: For most of my baking, I prefer using all-purpose flour. It makes for a soft and tender biscuit and is the closest match to those Cheddar Bay Biscuits.
  • Baking Powder: Baking powder is key for these biscuits to help with the rise and fluffiness. Especially if you make the biscuits on their own, you will want those perfectly soft and fluffy drop biscuits.
  • Salt: This recipe needs a bit of salt for the right flavor but I am not keen on giving my daughter too much sodium so there is not much called for in the recipe. The amount is perfect and does not sacrifice on flavor despite the little salt. I also prefer using salted butter in many of my baking recipes so this is another reason to use less added salt. If you prefer using unsalted butter you may wish to add a little more salt.
  • Cheddar Cheese: You can omit the cheese if you just want plain biscuits, but the cheese makes every bite deliciously ooey gooey and gives so much more flavor. If you opt to go with the garlic seasoning the cheddar cheese really helps in balancing everything out making it the perfect combination.

– Wet Ingredients:

  • Butter: As stated above, I prefer using salted butter in a lot of my baking. I find that it gives much more flavor and I rarely notice too much of a salty taste. In fact, I find that using salted butter can actually help in cutting down on too much sweetness especially in desserts. These biscuits have great flavor and I think a lot of this can be contributed to using salted butter. It is also key to use melted butter in this recipe to get the proper blending of ingredients and moisture needed for those soft and tender biscuit bites.
  • Milk: In most of my recipes I use whole milk. Again, like the salted butter, it generally provides better texture and flavor. Also, using whole milk is generally recommended for children 2 and under because it gives excellent nutrients needed for development so I carry that into cooking too rather than just leaving it to drinking whole milk.

Optional Garlic Cheddar Biscuits:

  • Garlic Powder: If you decide to go for the full recipe of the toddler garlic cheddar egg biscuit bites then you will need to add 1/4 teaspoon of garlic powder to the biscuit dough. Garlic powder packs a punch so it does not take much to get good flavor while not being too overpowering.

Optional Garlic Butter Topping:

I told you this recipe had a lot of options to dress it up or down. If you want the full blown delicious egg biscuit bites then you’ll want to add this topping to each of the bites after they have baked and while they are still hot.

  • Butter: Once again you will use melted butter so that you can easily brush this topping over the bites once they are taken out of the oven. It will add a little more sodium to the nutrition, but it is a fun and tasty treat.
  • Garlic Powder: Just like the added seasoning in the biscuits, for the topping you do not need to add too much garlic powder but you will want to add a little to round out the flavor of the topping and the biscuits as a whole.
  • Parsley Flakes: The parsley adds just a hint of savory flavor and gives beauty to the biscuits. This matches well to the Cheddar Bay Biscuits as they seem to do a similar topping. This one little edition makes these biscuit bites look more fancy and professional than they really are, because believe me they are so simple to make but no one will ever guess that by looking at them.

Ingredients
  

Egg Bites

  • 6 Large Eggs
  • 3 tbsps Whole Milk

Biscuits

  • 1 cup All-Purpose Flour
  • ½ tbsp Baking Powder
  • tsp Salt Add a little extra if using unsalted butter
  • ¼ cup Salted Butter melted
  • ½ cup Whole Milk
  • ½ cup Shredded Sharp Cheddar Cheese Use up to ¾ cup of cheese for extra cheesy biscuits
  • ¼ tsp Garlic Powder Add to the biscuit dough if using

Optional Garlic Butter Topping

  • 1 ½ tbsps Salted Butter melted
  • ¼ tsp Garlic Powder
  • ½ tbsp Parsley Flakes

Instructions
 

  • Preheat oven to 400℉.
  • Grease a mini muffin pan or use mini muffin liners and set aside.

Egg Bites

  • Add the 6 eggs and 3 tablespoons of whole milk to a mixing bowl and whisk the eggs and milk together until combined and smooth. Set aside. 6 eggs, 3 tbsps whole milk

Biscuits

  • Mix all biscuit ingredients together in a bowl until combined. Dough will be sticky. (Omit the cheese and/or garlic powder if you want plain or cheese only biscuits) 1 cup flour, ½ tbsp baking powder, ⅛ tsp salt, ¼ cup melted butter, ½ cup whole milk, ½ to ¾ cup shredded cheddar cheese, ¼ tsp garlic powder

Optional Garlic Butter Topping

  • In a small bowl mix together all garlic butter topping ingredients until combined. 1½ tbsps melted butter, ¼ tsp garlic powder, ½ tbsp parsley flakes

Toddler Egg Cheddar Biscuit Bites

  • Scoop a small portion (about ½ tbsp) of the biscuit dough and place into the bottom of each cup of the mini muffin pan. Alternate filling the cups with a small scoop of the egg mixture and the biscuit dough until each cup is approximately ⅔ cup full.
  • Bake egg cheddar biscuit bites for 10 minutes.
  • Once the egg cheddar biscuit bites are done baking, remove them from the oven and immediately brush the tops with the garlic butter topping.
  • Allow the egg cheddar biscuit bites to cool briefly for about 5 to 10 minutes and then remove from the mini muffin pan and set on a cooling rack to finish cooling.

Notes

– Storage: Once the egg cheddar biscuit bites have cooled completely you can wrap them individually in plastic wrap and place them into an airtight freezer-friendly plastic baggie. These can be stored in the freezer for 2 to 3 months. I have also just placed them directly into the baggie and not used the plastic wrap but the quality is a bit better when wrapped in the plastic wrap and you do not run the risk of the bites unwantedly sticking together. 
– Reheating: My preferred method for reheating egg cheddar biscuit bites is warming them in a toaster oven for around 10 to 15 minutes. I find the texture to be the best especially if your toddler is a slow eater the texture will last. If you need to reheat quickly then you can reheat the bites in the microwave for approximately 15 to 30 seconds, or until heated through. I do find wrapping them in a damp paper towel can help with texture. If you reheat the bites in the microwave, the bottoms of the eggs might become tough if not eaten relatively quickly especially if heated too much. 
Layering: When it comes to filling the mini muffin pan with the biscuit dough and the egg mixture I highly recommend using the biscuit dough first using it on the bottom of each cup. The biscuit on the bottom of each bite acts similar to a pie crust keeping everything together. I also find that when it comes to reheating, the eggs on the bottom can become a little tough but the biscuit on the base reheats perfectly. They work either way and will taste great, but this is what I prefer.  
Additional Serving Options: As previously stated, you can make the egg bites only, make drop biscuit bites only, or you can make the egg and biscuit bites combined and either do plain biscuits, cheesy biscuits, or garlic cheddar biscuits. The Endless Options

This recipe is simple, uses basic ingredients, and as you can see the options feel endless. You can also use these bites for breakfast, lunch, dinner, or snacks. I like having the egg cheddar garlic biscuit bites on hand for lunch or dinner, but for breakfast garlic does not always feel as appealing so having just the plain or cheddar biscuit bites on hand is ideal. The recipe also makes a lot so you can split the biscuit dough in half and make half with garlic and half without (just be sure to half the garlic!). Plus, because you can make so many egg biscuit bites at one time and freeze them they are ideal for meal prep and having a quick food on hand for your toddler and the rest of your family.
