Simple Homemade Chili

This simple homemade chili is quick and easy to make, hardy, and sure to please the whole family.

- 1 lb Lean Ground Beef
- 1 Diced Yellow Onion
- 2 tsps Minced Garlic
- Salt and pepper to taste
- 1 can Pinto Beans 15.5 oz can
- 1 can Ranch Style Beans 15 oz can
- 1 can Petite Diced Tomatoes 14.5 oz can
- 1 can Tomato Paste 6 oz can
- 3 ½ tbsps Chili Powder
- A dash of smoked paprika optional
Dice the yellow onion and add to a large saucepan along with the ground beef, minced garlic, and salt and pepper.
Cook the meat mixture breaking up the beef into small pieces until the beef is browned and cooked through and onions are transparent.
Add the full cans including all liquids of the petite diced tomatoes, pinto beans, ranch style beans, and tomato paste and stir until combined.
Add the chili powder and the smoked paprika and stir until combined.
Allow the chili to come to a boil stirring occasionally. Once boiling reduce the heat to a simmer.
You can serve right away or for more flavor allow the chili to sit on low heat stirring occasionally for approximately one hour. If the chili begins to reduce too much then turn off the heat and allow to sit stirring occasionally until cool enough to store or serve.
- Flavor: I have served this chili right after allowing it to get to boiling and so within 30 minutes had dinner on the table and it was delicious; however, if you have the time you can make this chili and allow it to simmer for longer for added flavor. You can also make it ahead of time and store in the refrigerator overnight before reheating to serve. The longer you allow the chili to sit the more flavor. I generally make the chili and allow to sit on low heat over the stove for 30 minutes to 1 hour stirring occasionally. I then allow the chili to cool on the stovetop while stirring occasionally and will then store in the refrigerator until serving it later that night and the next several nights.
- Serving: Top the chili with shredded cheese, jalapenos, sour cream, or whatever your favorite toppings are. I usually serve the chili with Fritos corn chips or corn bread. We have also had the chili over baked potatoes or mixed in with cooked pasta and both are delicious and a fun switch up from the usual chili in a bowl.
- Amount: This chili usually lasts my family of 3 about 3 to 4 nights of dinner if not longer. Even my toddler enjoys this meal but naturally eats less than me and my husband.
